Sweet Pork, Lime Rice, and Tomatillo dressing

Thanks to Emily, (for telling me), 'Studio One' (on channel 5 in the mornings), showed how to make a favorite dish at Cafe Rio or Costa Vida. The Sweet Pulled Pork and Lime Rice. I made it for dinner, and I am here to say..IT TASTES EXACTLY LIKE IT!!! This is a big WOOHOO! I have the recipies for the pork, rice and that yummy green dressing they make if anyone wants to try it. You have to be patient, as the pork roast has to cook in a crock pot all day, but wow is it worth it!!! Let me know if any of you try this. Kim just kept telling me how much he liked it, since he has never had sweet pork before. I hope if you make it, you like it as much as we did.

Put a pork Picnic roast in a slow cooker/crockpot for 8 hours. Put 1 1/2 cups brown sugar and 1 1/2 cups MEDIUM salsa mixed together, and put it in the crock pot with the meat for the 8 hours. Use medium salsa, or hot, so it has more flavor, as the mild salsa won't have as good of flavor after cooking.

When the meat is tender, pull it off the bones with 2 forks, and put the shredded meat back in the sauce. Serve it 'saucy'. (This makes a lot, so you can use it for multiple meals)


The Lime rice will look like the picture above after it is cooked.
1 cup rice
1 14 oz. can of chicken broth
1/4 cup water
1 t. lime zest (grated lime peeling. Just the green part)
1 t. butter.

Cook for 15-17 minutes

After the rice is cooked, add these ingredients to the hot rice. This is what it will look like with added ingredients.

Mix together:
2 T. lime juice
2 tsp. sugar
3 T. cilantro
2 cloves garlic minced


The salad dressing is so good! Here it is as follows:

Tomatillo Dressing

1 c. sour cream
1 pkg. Hidden Valley Ranch dressing mix
1/2 pkg. Fiesta Hidden Valley Ranch mix
6 tomatillos (I had never bought these before. I had to ask the produce lady where they were.) (Husk tomatillos then cut in wedges)
1 clove garlic
Juice of 1 lime
1/4 c. cilantro


Put all of above in blender and blend for about 30 seconds. It will have a slight green color. Put in the fridge to meld flavors.

(Make this during the day, so as you are not trying to make this when you are pulling the pork, and making the rice)

Warm some flour tortillas in the microwave. Put on a plate or wide opening bowl. Put some lime rice on top of tortilla. Put on some meat. Put lettuce on top. Sprinkle on cheese. I made some guacamole to go on top also. Then pour the dressing on top.

They said you can buy the chip strips that they put on in the restaurant, from the restaurant. A bag for only about $2.00. I just crumpled up some corn tortillas for the top instead, and it was fine.

You can roll some rice and meat in a flour tortilla also if you wanted to do that.

I hope someone trys this recipe!!! It is sooooo good.

  1. Haha...I bought all of the stuff, went home to make it yesterday, and realized I hadn't bought the MEAT. Of all things to forget, I forgot the main one. I'm such a dork. So, I guess I'll make it tomorrow or something.

  2. Ok, I made it tonight. I would only put half a lime (juice) in the dressing. It was too "Lime-ey."

    I also was not a fan of the rice. I guess I don't like the big flavors of the cilantro, lime, and garlic being so strong. I loved the rest...but will probably just make plain white or brown rice next time I make it again. Yummy!

  3. Thank you so much for these ideas. I just don't like the pork idea, I wonder if you can put chicken in it instead. I am, way excited to make the lime rice and salad dressing. I like Cafe Rio Wayyyyyyyyyy more than Costa Vida though. But Costa Vida's cilantro ranch dressing was killer!
